All lamb served in Graze restaurant comes from Castle Mountain Pastoral Company located in Quirindi, 20 kms north of the Willow Tree Inn.

Castle Mountain was purchased by our company in 2020 with the purpose of producing prime lamb to traditional butchery specifications utilising the latest genetics and farming practices. The 3000 acre property located on both sides of Wallabadah Road consist of sheltered hills with an abundance of natural pastures running down to highly productive creek flats producing a mix of summer and winter fodder and improved pastures.

Our breeding flock of 2500 first cross ewes were sourced from top producers across Western NSW as lambs, and selected on mid to large frame size with proven Merino and Border Leicester bloodlines. Working with Abelene Park Stud, Poll Dorset Rams were selected for our terminal sires with a focus on birth weight, high feed conversion and carcase traits. To enable a consistent year round supply of second cross prime lambs to the restaurant and butcher trade we run three separate joining’s and a complementary winter and summer cropping program balanced with improved pastures.

We select the 50 best lambs each month exclusively for Graze Restaurant and our Butchery located in Willow Tree. Our second cross lambs born and raised at Castle Mountain have exceptional flavour, tenderness and consistency.

ANDREW & CASSIE SUTHERLAND

Castle Mountain Pastoral Company – Quirindi

Andrew originally from the Southern Highlands and Cassie from Broken Hill both pursued careers in agriculture from a young age and have gained extensive experience in managing mixed farming enterprises across NSW.

After starting a family they decided it was time to return to the Liverpool Plains District, an area they both previously enjoyed and wanted to settle to raise their four young boys.

The Sutherlands joined our company in August 2020 when we purchased a 3000-acre property in Quirindi. Andrew and Cassie have a particular passion for breeding a strong line of sheep that produce consistent quality prime lamb.

Running three separate joining’s per year, fodder cropping, hay production and pasture development is closely planned and managed by Andrew. With animal welfare paramount to the operation, Cassie’s prior experience in Equine Nursing is invaluable. All stockwork is undertaken with stock horses and working dogs to ensure low stress handling.

As Managers of Castle Mountain Pastoral Company, Andrew and Cassie are responsible for delivering the highest quality lamb year-round for Graze Restaurant and our Butcher Shop.
